4 apples (8 - 9 oz. each)
1/4 cup candied fruits in rum
4 teaspoons margarine or butter
1 cup vanilla ice cream

Wash and towel dry the apples. Puncture the apple skin with a fork on four different sides to prevent the apples from bursting in the microwave. Core with a 3/4-inch deep cavity to hold the fruits.

Stuff apples with dried fruits. Place the apples on individual mugs and top with margarine or butter. Cover with a vented microwave lid or a saucer. Place the plates on the turn table, leaving the center open. Cook on HIGH (1200W) for 10 – 12 minutes.

Remove the cover (be careful of the steam) and transfer to serving plates; pour any juice over the apple. Serve with ice cream. Garnish with mint leaves.
