Yakisoba Noodle with Tuna and Vegetables

[4 servings]    Cooking time: 15 minutes
 

6 ounces Chow Mein noodles or angel hair pasta
2 tablespoons olive oil
1 pound canned tuna, drained
1 cup red bell pepper, cored and cut into bite size
2 cups crimini mushrooms, sliced
1/4 cup green peas, frozen
2/3 cup carrot, shredded

< Yakisoba Sauce >

1 teaspoon salt
1/8 teaspoon pepper
1 teaspoon sugar
1 teaspoon chicken bouillon granules or 1 cube, crushed
1 tablespoon soy sauce
1 tablespoon corn starch

< Garnish >
2 tablespoons green onions, chopped

1. Bring the water to a boil. Cook the Chow Mein noodles for 3 – 5 minutes. Drain. (1 minute for angel hair pasta.)

Brown the bottom side over high heat. Slide noodles onto a plate and flip over, back into the skillet. Drip olive oil around the perimeter of the pan and cook until noodles are brown.

Image of mixture of tuna and vegetables 3. Place the tuna and vegetables in 3-quart casserole while the noodles are browning.

4. Mix Yakisoba sauce ingredients in a bowl and pour over the tuna and vegetables.

5. Cover with a microwave lid. Cook on HIGH (1200W) for 8 – 9 minutes. Serve over noodles. Garnish with green onions.

* When using plastic wrap as a cover, poke a hole in the center to release the steam
