Pasta Carbonara |
Low calorie pasta with cheese sauce, pancetta, and mushrooms |

3/4 pound linguini
< Carbonara Sauce >
1 tablespoon olive oil
1/2 cup pancetta, cut 1/4 by 1 inch
1 1/2 cups crimini mushrooms, sliced
1/3 cup half & half cream
2 tablespoons Parmesan cheese, grated
4 whole eggs
1/2 teaspoon salt
1/8 teaspoon pepper
< Garnish >
4-5 basil leaves

Cook the linguini as directed on the package.

Place olive oil and the pancetta in the bottom of a 4-quart casserole. Add the mushrooms on top. Cover with a microwave lid. Cook on HIGH(1200W) for 4 – 5 minutes.

Combine the cream, Parmesan cheese, eggs, salt, and pepper in bowl and mix well.

4.
Pour the cream mixture into the pancetta and mushrooms and mix together
|
5.
Pour the linguini into the bowl and coat with the sauce. Serve on individual plates and garnish with basil leaves.
