2 cups white rice (uncooked)
2 cups boiling water
2 tablespoons margarine or butter
2 tablespoons soy sauce
1/3 cup onion, chopped
2 cups cooked ham, diced into 1/2-inch squares
2 cups shredded lettuce
4 tablespoons parsley, finely chopped
1/8 teaspoon pepper

Rinse the rice and place in a 3-quart casserole. Pour in the boiling water. Add margarine or butter, soy sauce and mix. Layer the onion and ham on top.

Cover with a vented microwave lid* and cook on HIGH (1200W) for 5 minutes. When it reaches a boil, reduce power to LOW (30%) and cook for 14 minutes.

Take out and let it sit for 5 minutes with the cover on. Add the lettuce and parsley and fluff it with a fork.

Transfer to a serving dish and sprinkle with pepper.
* When using plastic wrap as a cover, poke a hole in the center to release the steam
