Mix the ground beef and tomato sauce in a 1quart-casserole dish. Cover with a vented microwave lid* and cook on HIGH (1200W) for 8 - 10 minutes. Make sure the ground beef is cooked thoroughly. Take it out and stir until it is well blended.

Slice the pork tenderloin into 8 pieces and pound them lightly to flatten. Sprinkle with salt and pepper.

Pour half of the meat sauce into a 3-quart casserole dish. Place the pork tenderloin pieces on the meat sauce. Keep the center of the casserole open (this will allow the pork to cook thoroughly.) Pour the rest of the meat sauce over the pork. Sprinkle with Parmesan cheese and cover with a vented microwave lid.*

Cook on HIGH (1200W) for 7 - 8 minutes. Take it out and transfer to warm serving plates. Garnish with chicory, radicchio and parsley and serve. Sprinkle with grated Parmesan cheese if desired.
* When using plastic wrap as a cover, poke a hole in the center to release the steam.
