2 red bell peppers, cored and cut in half
1 green bell pepper, cored and cut in half
1 yellow bell pepper, cored and cut in half
1 cup onion, thinly sliced
1 cup mushrooms without stems, coarsely chopped
1/2 cup parsley
1 tablespoon olive oil
3/4 pound leanest ground pork
1 teaspoon salt
1/8 teaspoon pepper

4-5 sprigs parsley

Place the onions, mushrooms, parsley, and olive oil in a microwave-safe bowl (2.5 liter or 2 1/2 quart.) Cover with a vented microwave lid. Cook on HIGH(1200W) for 4 minutes and let it cool.

Finely chop the cooled ingredients in a food processor. Add the ingredients, plus salt and pepper to the pork and mix well.

Place the pork mixture in the bell pepper halves. Put a paper towel or waxed paper on a microwave-safe plate. Arrange bell pepper halves around the plate, leaving the center empty. Cover with a vented microwave lid.

4.
Place a bacon rack on turn table. Center the bell pepper plate on top. Cook on HIGH(1200W) for 10 – 12 minutes.

Serve on heated plates and garnish with parsley and ground pepper.
