Chicken & Lima Beans Soup
Quick menu for a healthy, high fiber soup

[4 Servings]    Cooking time: 35 minutes
 

2 cups onion, coarsely chopped
1 tablespoon garlic, minced
1 tablespoon olive oil
2 cups canned-lima beans
1 cup plum tomatoes, quartered
2 cups chicken breast, cut into 1/4-inch cubes
4 cups boiling water
2 teaspoons chicken bouillon granules, or 1 cube, crushed
1/2 teaspoon salt
1/8 teaspoon pepper

< Garnish >
1 tablespoon parsley, chopped

Image of mixing onion, garlic and olive oil. 1. Place the onion, garlic and olive oil in a 3-quart casserole, and mix thoroughly. Cover with a vented microwave lid and cook on HIGH (1200W) for 4 – 5 minutes.

Image of cooked onion, lima beans, plum tomatoes, and chicken breast. 2. Remove from the microwave and add the lima beans, plum tomatoes, and chicken breast in order. Chicken breast should be the top layer because it takes the longest to cook.

3. Add the boiling water, chicken bouillon, salt and pepper. Cover with a vented microwave lid.*

4. Cook on HIGH (1200W) for 13 – 14 minutes or until the broth reaches a boil. Reduce the power to LOW (30%) and cook for 5 – 6 more minutes. Make sure the chicken is well cooked.

5. Transfer to warm serving bowls, garnish with parsley and serve.

* When using plastic wrap as a cover, poke a hole in the center to release the steam.
