Onion Soup
Smooth and Sweet

[4 Servings]    Cooking time: 30 minutes
 

6 cups onion, thinly sliced (2 lbs.)
2 tablespoons margarine or butter
4 cups boiling water
1 teaspoon beef bouillon granules, or 1 cube, crushed
1/2 teaspoon salt
A dash of pepper
4 tablespoons Gruyere cheese, shredded

< Garlic Toast >
4 slices French bread, (1-inch thick)
1 teaspoon margarine or butter
A sprinkle of garlic powder
2 tablespoons Gruyere cheese, shredded

1. To make garlic toast, spread margarine or butter on French bread or any bread you prefer. Sprinkle with garlic powder and Gruyere cheese and toast in toaster oven or oven until the bread turns brown.

Image of onion made ready for microwave cooking. 2. Place the onion in a microwave-safe bowl (3 liter or 3 quart), and cover with a vented microwave lid.* Cook on HIGH (1200W) for 5 minutes. When the onion becomes tender, uncover and cook 5 more minutes to reduce the excess fluid.

Image of mixing margarine and cooked onion. 3. Add the margarine and mix until it melts. Cook for 10 more minutes without covering. It tends to burn from the edges. To avoid this, take out a couple of times and stir.

4. Add the boiling water and beef bouillon, cover with a vented microwave lid and cook on HIGH (1200W) for 4 minutes or until it reaches a boil. Sprinkle salt and pepper to taste.

5. Place a garlic toast in each serving bowl, pour in the soup and sprinkle with cheese.

* If using plastic wrap as a cover, poke a hole in the center to release the steam.
* You can make <Onion Casserole> simply by baking the Onion Soup in 450F oven.
