1/2 pound whole beef sausage, pierce the casing with fork tines so it won't split
1/2 head cabbage, cut into four wedges
2 cups potatoes, cut into 1/2 inch cubes
1 Large tomato, cored and cut into 8 wedges
1 1/2 cups onion, sliced
1 can (10.6 oz.) sliced beets
1/2 cup beet juice
2 cups boiling water
1 bay leaf
2 teaspoons beef bouillon granules or 2 cubes, crushed
1 teaspoon salt
1 teaspoon whole pepper
4 tablespoons sour cream

Place the prepared vegetables and sausage in a microwave-safe bowl (4 quart.) Add boiling water and the beet juice from the can.

Add the bay leaf, bouillon, salt and pepper. Cover with a microwave lid.

Cook on HIGH(1200W) for 15 – 16 minutes or until the fluid boils. Switch to LOW (30%) and cook for 9 – 10 minutes or until the potatoes are tender.

Serve with a dollop of sour cream.
* When using plastic wrap as a cover, poke a hole in the center to release the steam.
