Place a microwave bacon rack on the turn table, lay bacon on top. Cover with a paper towel. Cook on HIGH(1200W) for 2 – 3 minutes or until the bacon becomes crispy. Absorb the fat with paper towels. Cut the bacon in 1/2-inch lengths.

Put 1 teaspoon water per egg in a microwave egg-cooker and crack in the eggs. Pierce the yoke with a toothpick ( to keep it from bursting) and cook on HIGH(1200W) for 50 – 60 seconds or until the eggs are lightly poached.

Combine the dressing ingredients and eggs in a bowl and mix until eggs are blended. Add lettuce, bacon, chopped parsley, and garlic croutons. Toss gently until the lettuce is coated with dressing. Divide onto 4 plates and serve.
