Tomato Sauce |
Microwave cooking only uses 1/4 of the oil for cooking |

[Makes 3 1/2 cups]
Cooking time: 20 minutes

2 3/4 cups cooked, canned tomatoes, chopped
1/2 cup onion, chopped
1 tablespoon garlic, minced
1 tablespoon olive oil
1 bay leaf
1 teaspoon salt
1/8 pepper
2 tablespoons white wine

Place onion, garlic, olive oil, bay leaf, salt and pepper in a microwave-safe bowl (4 liter or 4 quart) and mix well. Make sure olive oil is well blended. Cover with a vented microwave lid and cook on HIGH (1200W) for 3 minutes.

Take out and stir until it becomes smooth.

Add tomatoes and white wine. Cover and cook on HIGH (1200W) for 5 – 6 minutes.

4.
When it reaches a boil, take the cover off and cook 5 – 6 minutes. When ready to serve, remove the bay leaf.
