Pesto & Mayonnaise Macaroni
Mild and smooth creamy basil sauce

[4 Servings]    Cooking time: 20 minutes
 

1/2 pound macaroni (fussili)
3 quarts boiling water
1/4 cup low-fat mayonnaise

< Basil Paste >

4 cloves (1 oz.) garlic
1/2 teaspoon salt
3 tablespoons olive oil
1/8 teaspoon pepper

< Garnish >
2 basil leaves

1. To make the <Basil Paste>, blend the Basil Paste ingredients in a food processor or blender until it is smooth.

2. Mix the paste and mayonnaise in a large bowl.

3. Combine the boiling water and macaroni in a microwave-safe bowl (4 liter or 4 quart.) Cover with a vented microwave lid and cook on HIGH(1200W) for 5 – 6 minutes or until it comes to boil.* Reduce power to LOW(30%) and cook for the length required for stove-top cooking. Drain.

4. Add the hot macaroni into the paste bowl and mix gently. Garnish with basil leaves before serving.

* When using plastic wrap as a cover, poke a hole in the center to release the steam.
