Halibut Nitsuke* in Red Chili and Ginger Sauce
An easy, elegant entrée with exotic taste

[4 servings]    Cooking time: 15 minutes
 

4 pieces(1 1/2 lbs.) halibut, bluefish, or cod fillets (skinned and boned)

< Nitsuke Sauce >
1/4 cup soy sauce
1/4 cup sugar
1/8 cup white wine
2 red-hot chili peppers, cut in half and seeded
8 slices gingerroot

< Vegetable Sticks >
1 medium carrot, cut into 2-3 inch sticks
1 stalk celery, cut into 2-3 inch sticks
4 red radishes

1. Mix the Nitsuke sauce ingredients in a 3-quart casserole and stir until the sugar dissolves.

Photo of halibut fillets made ready for microwave cooking 2. Place the fillets in the sauce around the perimeter of casserole. Coat the fish with sauce. Cover with a microwave lid.

3. Cook on HIGH (1200W) for 10 – 12 minutes.

4. Place the fillets on heated plates and spoon the sauce over the fish. Serve with vegetable sticks.

* When using plastic wrap as a cover, poke a hole in the center to release the steam.
