Quick menu for a healthy, high fiber soup |
|
[4 Servings]
Cooking time: 35 minutes
|
|
2 cups onion, coarsely chopped
1 tablespoon garlic, minced
1 tablespoon olive oil
2 cups canned-lima beans
1 cup plum tomatoes, quartered
2 cups chicken breast, cut into 1/4-inch cubes
4 cups boiling water
2 teaspoons chicken bouillon granules, or 1 cube, crushed
1/2 teaspoon salt
1/8 teaspoon pepper
< Garnish >
1 tablespoon parsley, chopped
|
1.
Place the onion, garlic and olive oil in a 3-quart casserole, and mix thoroughly. Cover with a vented microwave lid and cook on HIGH (1200W) for 4 – 5 minutes.
|
2.
Remove from the microwave and add the lima beans, plum tomatoes, and chicken breast in order. Chicken breast should be the top layer because it takes the longest to cook.
|
3.
Add the boiling water, chicken bouillon, salt and pepper. Cover with a vented microwave lid.*
|
4.
Cook on HIGH (1200W) for 13 – 14 minutes or until the broth reaches a boil. Reduce the power to LOW (30%) and cook for 5 – 6 more minutes. Make sure the chicken is well cooked.
|
5.
Transfer to warm serving bowls, garnish with parsley and serve.
